CINNAMON SWIRL BREAD



A delicious bread that tastes as great as it smells. Try it toasted.

INGREDIENTS:


1 3/4 cups sugar
1 cup oil
4 eggs
3 cups flour
2 tsp. baking powder
1/2 tsp. salt
1 cup lactose-free milk
1 tsp. vanilla
2 Tbs. sugar
2 Tbs. brown sugar
2 Tbs. cinnamon
1/2 cup chopped nuts, if desired


In large bowl beat oil and sugar until well blended. Add eggs one at a time, beating well after each addition. Sift together dry ingredients. Add to creamed sugar mixture alternately with lactose-free milk. Blend in vanilla. Mix sugars, cinnamon and nuts together in small bowl.

Pour 1/4 of batter into two bread pans that have been sprayed with non-stick cooking spray. Top each with 1/4 of filling and swirl with tip of a knife. Pour remaining batter over filling, top with second half of filling and swirl again.

Bake 45 minutes in 350° oven. Cool 15 minutes in pans then remove to wire rack to complete cooling.
