

INGREDIENTS:
2 11 oz. cans of Mexicorn
2 cup real mayonnaise (NOT Miracle Whip)
12 oz. Pepperjack cheese, shredded
1 cup grated Parmesan cheese (NOT the one in the green can)
Optional Ingredients: 7 oz. jar of roasted red peppers and/or green chiles (I don't use these)
Mix everything together and place in a 2 Qt. baking dish.
Bake at 350° for 30 minutes.
