LEMON COOKIES



I like to double the amount of lemon rind.

 
INGREDIENTS:

1 cup margarine (2 sticks)
3 oz. cream cheese
1 cup sugar
1 egg
2 1/2 cups sifted flour
1 teaspoon baking powder
1 teaspoon grated lemon rind
1 tablespoon lemon juice

FROSTING
1 cup powdered sugar
1/4 cup softened butter
1 teaspoon lemon rind
2 tablespoon lemon juice

Heat oven to 375°. Butter cookie sheet or cover with parchment.

Cream margarine and cream cheese. Add in the sugar and beat til fluffy. Beat in the egg and lemon juice.

Stir in the flour, the baking powder and the lemon rind.

Drop on prepared cookie sheet and bake 8 to 10 minutes. The cookies will be pale.

Combine ingredients for frosting. Frost cookies when cool.

YIELD: About 3-1/2 dozen.
