MOZZARELLA MELT



INGREDIENTS:

2 to 3 Tbs. olive oil
2 to 3 cups sliced mushrooms
1 green pepper, chopped
3 cloves garlic, finely chopped
12 oz. rigatoni, cooked al dente
2 cups grated soy Mozzarella cheese
Pepper to taste


In Dutch oven or large pot heat olive oil. Add mushrooms and green pepper; sauté 10 minutes or until tender. Add garlic and sauté 1 minute.

Add cooked pasta and toss to mix ingredients. Add grated soy Mozzarella and pepper, toss until mixed, cover and heat until soy cheese has melted.
