

INGREDIENTS:
2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 cup butter or margarine, softened
1 cup sugar
2 eggs
1 cup mashed bananas (2 or 3 medium)
2 tablespoons milk
1 teaspoon lemon juice
Grease one 9x5x3-inch loaf pan or three 4 1/2x2 1/2x 1 1/2-inch loaf pans. In a small mixing bowl stir together flour, baking powder and baking soda. Set pans and flour mixture aside.
In a large mixing bowl beat butter with an electric mixer on medium to high speed for 30 seconds. Add sugar and beat until fluffy. Then add eggs, beating on medium speed until combined. Add bananas, milk, and lemon juice, beating well. Beat in flour mixture on low speed just until combined.
Pour batter into prepared pans. Bake in a 350° F. oven about 45 minutes or until a wooden pick inserted near center comes out clean. Cool bread in the pans on a wire rack for 10 minutes. Remove from pans; cool completely on the rack. Wrap in foil or place in plastic bag and store at room temperature overnight before slicing.
