

INGREDIENTS:
4 Idaho potatoes (med.)
2 Tbsp margarine
2 Tbsp flour
2 cups milk
1/2 cup shredded Swiss cheese
1 cup diced cooked ham
2 tsp lemon juice
1/2 tsp salt
1/8 tsp nutmeg
1/8 tsp pepper
2 Tbsp chopped parsley
Boil and cut potatoes into one-inch cubes. Use salted water for this. In medium-size saucepan, melt margarine; blend in flour and cook over medium heat, stirring constantly until it thickens and it comes to a boil. Remove from heat. Stir in cheese and remainder of ingredients. Gently stir in potatoes. Turn into a 1 1/2-quart casserole or baking dish.
Bake 20 minutes in 350° oven.
NOTE: This is a side dish, for main dish, double ham.
