QUICHE LORRAINE



A deliciously complete dish great for any meal. Just because you are lactose intolerant doesn't mean you have to miss out on this classic favorite.

INGREDIENTS:
1 tsp. oil
1 small onion, finely chopped
3 whole eggs
2 egg yolks
1 cup non-dairy creamer
2 tsp. flour
1/2 tsp. salt
1/2 tsp. pepper
1 lean ham steak to yield approximately
1 cup small cubes
6 to 8 soy Swiss cheese slices, cut into small pieces
1/4 cup grated soy Monterey Jack cheese
One pie crust baked 8 minutes and cooled


Bake pie crust until just beginning to brown; cool. In skillet heat oil and sauté onion until just beginning to turn brown; cool. In medium bowl, beat eggs, egg yolk, non-dairy creamer, flour and seasonings together. Fold ham, onion and soy cheeses into egg mixture and gently pour into pie crust.

Bake 45 to 55 minutes in 375° oven or until knife inserted into center comes out clean. Let stand 5 minutes before serving.
