

This is such a flavorful dish you will love how delicious it tastes. Ideal for entertaining or a nice romantic dinner for two.
INGREDIENTS:
1 1/2 lbs. scallops
3/4 cup dry white wine
1/2 tsp. salt
1/2 tsp. cayenne pepper sauce
1 Tbs. minced onion
2 Tbs. margarine
3 Tbs. flour
3/4 cup non-dairy creamer
1 cup grated soy Cheddar cheese
3 slices of bread, crusts removed

Cut scallops into bite-size pieces. Place scallops pieces in large saucepan with wine, salt, cayenne and onion. Bring to boil and cover; reduce heat and simmer for 5 minutes. Drain scallops, reserving the wine broth.
In same saucepan, melt margarine and blend in flour.Gradually add wine broth and non-dairy creamer. Heat over medium/high heat to boil, stirring constantly. Once thickened, add cheese and stir until melted. Add scallops and stir.
Divide between 4 or 6 individual baking dishes (or a 1 1/2 quart casserole dish, if preferred) that have been sprayed with non-stick cooking spray. Spread margarine on bread and cut into cubes. Divide bread cubes evenly among casseroles and sprinkle on.
