

INGREDIENTS:
1 lb sausage (mild or spicy according to taste)
cake flour
butter
milk
salt
nutmeg
breadcrumbs (optional)
shredded swiss cheese
Peel and cut zucchinis in half, lengthwise, scoop out the seeds. Deep fry the zucchinis and place hollowed side down on paper towel lined plate to drain.
Fry up the sausage and break up or grind it, drain and set aside. In a saucepan melt the butter and add the cake flour to make a bechamel sauce (white sauce), add the salt and nutmeg and cook until thick. Stir sausage in and mix well.
In an oven proof dish arrange the zucchini hollowed side up and fill with the sausage mixture, top with cheese and breadcrumbs. Bake in moderate oven until the cheese is melted. Serve
