TOFU-GELATIN SURPRISE SALAD



Tastes very much like the salad your mother used to make with cottage cheese. This version is ultra healthy using tofu and can be low in fat and sugar depending on what ingredients you choose to use. Picking the sugar-free gelatin and fat-free frozen whipped topping coupled with fruit choices in natural juices or light syrup can make this a deliciously light summer salad choice.

INGREDIENTS:

1 lb. firm tofu, well drained
1 large box or
2 small boxes sugar-free gelatin, any flavor
Fruit suggestions - pick 2 different 15 oz. cans
Crushed pineapple
Fruit cocktail
Pears, cut into small chunks
Peaches, cut into small chunks
Mandarin oranges (will be smaller can)
1 jar maraschino cherries, drained and cut in half
12 oz. non-dairy frozen whipped topping
1 cup flaked coconut, if desired


In large bowl mash tofu with potato masher or fork until in small curd size pieces. Sprinkle gelatin over tofu and fold until blended. Fold in well drained fruit choices and cherries. Fold in thawed whipped topping.

For an ambrosia or Hawaiian type salad, toss coconut into mixture. Chill 3 hours or overnight
