TURKEY with SAUSAGE DRESSING



INGREDIENTS:
1 lb. sausage
2 cups chopped onion
2 cups chopped celery
1/2 stick butter or margarine
12 cups dry bread cubes
1 tsp poultry seasoning
1-1/2 tsp salt
1 tsp sage
1 tsp thyme
1/2 tsp pepper
1/2 tsp marjoram
2 well beaten eggs
2 cans chicken broth

Wash the turkey well, make sure you remove the neck, heart, etc out of the cavity. Season inside and out with poultry seasoning and sage. Set aside.

Cook and break up the sausage in small pieces, add the butter to the grease tomake 1 cup. Brown the onion and celery. Mix the sausage, onion and bread cubes, add the salt, pepper, poultry seasoning, sage, marjoram and thyme. Add the 2 well beaten eggs and mix well. Add 2 cans of chicken broth and if not moist enough add a little water.

Stuff the turkey and neck cavity lightly (do not pack in). Follow directions as to how long to cook according to the weight of the turkey. Baste every once in a while.
