

INGREDIENTS:
1 16oz. Pkg. frozen white whole corn, thawed
1 16oz. Pkg. frozen baby peas, thawed
1 Cup chopped and peeled Jicama or water chestnuts
2/3 Cup chopped celery
1/2 Cup thinly sliced green onions
1/4 Cup chopped red and/or orange sweet pepper.
Dressing:
1/2 Cup seasoned rice vinegar
2 Tbsp. brown sugar
1 Tbsp snipped fresh parsley
1/2 tsp salt
1/4 tsp ground white pepper.
Combine the vegetables in a bowl.
In a jar combine the dressing ingrediets and shake well. Pour over salad and toss gently. Cover and chill about 2 hours.
