ZUCCHINI NUT BREAD



This bread is almost like a cake and very moist.



INGREDIENTS:
2-1/2 cups white sugar
3 eggs
1 cup oil
3-1/2 cups flour
1 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
3 tsp. vanilla
1/2 tsp cinnamon
2 cups grated zucchini
1 cup nuts (optional)

In a large bowl, combine and blend together eggs, sugar, and oil.

SIFT TOGETHER: flour, salt, baking soda and baking powder; Mix it together and then add vanilla, cinnamon, zucchini and nuts.

Mix well and pour into 2 large GREASED loaf pans or 3 smaller ones.

Bake at 350° for about 40 minutes, if still isn't done, lower oven temperature to 325° to finish.
